So I figured its time to pull out the crackers. Crackers are always a win in our house with Mr Picky and they are a win with Mom when they have spinach in them.<\/p>\n<p>I wish I could remember where the original Spinach Cracker recipe came from so I could credit them, but I have made my own spin on it. There are tons of Spinach cracker recipes online but this one tends to be my favorite. Its quick, simple, and so easy!<\/p>\n<p>First preheat the over to 375.<\/p>\n<p>Next:<\/p>\n<p>Mix these 6 ingredients together in a food processor or blender. \u00a0I use a mini cuisinart food processor and it works great.<\/p>\n<p><strong>1\/2 cup fresh spinach<\/strong><\/p>\n<p><strong>1\/8 cup\u00a0grapeseed oil<\/strong><\/p>\n<p><strong>1\/8 cup coconut oil<\/strong><\/p>\n<p><strong>1 tablespoon olive oil<\/strong><\/p>\n<p><strong>2.5\u00a0tablespoons of water<\/strong><\/p>\n<p><strong>1\/2 tsp baking powder<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-60\" src=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image3-e1467393545537-225x300.jpg\" alt=\"image3\" width=\"225\" height=\"300\" srcset=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image3-e1467393545537-225x300.jpg 225w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image3-e1467393545537-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>Then add:<\/p>\n<p><strong>1 cup flour<\/strong><\/p>\n<p>Slowly mix the flour into the spinach goo. \u00a0I\u00a0put 1\/4 cup of flour into the cuisinart and mix and keep doing that until the entire cup is gone and the spinach goo is turning into more of a dough. \u00a0You may need to take the dough out and knead it in a bowl until it tuns into a spinach dough ball.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-59\" src=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image2-300x225.jpg\" alt=\"image2\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image2-300x225.jpg 300w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image2-768x576.jpg 768w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image2-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Sprinkle flour on the pan to prevent sticking and then roll the dough with a rolling pin into a thin layer. \u00a0I also flour the rolling pin to prevent sticking. \u00a0My dough never quite gets rolled out into a perfect square. \u00a0After it is all rolled out, use a pizza cutter to cut the dough into nice little squares &#8211; or whatever shape your Mr Picky wants.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-58\" src=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image1-300x225.jpg\" alt=\"image1\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image1-300x225.jpg 300w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image1-768x576.jpg 768w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/image1-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Finally &#8211; Bake for 17-20\u00a0minutes and ta-da &#8211; you have spinach crackers!<\/p>\n<p>Mr Picky is going to be so happy when he wakes up from his nap!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-64\" src=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/baked-crackers-300x225.jpg\" alt=\"baked crackers\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/baked-crackers-300x225.jpg 300w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/baked-crackers-768x576.jpg 768w, http:\/\/www.amidwestmommy.com\/wp-content\/uploads\/2016\/07\/baked-crackers-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mr Picky decided today that he was no longer going to eat any of the foods he ate last week.
